When done, allow pressure to naturally release for 10 minutes, then quick release any remaining pressure and remove the lid. Cook on MANUAL high pressure for 8 minutes. This is important so that you don’t get a burn notice when cooking in the Instant Pot. Add chicken stock and scrape up any browned bits from the bottom of the pot. Remove pork chops and set aside on a plate.If working with a smaller Instant Pot, you may need to work in batches so you don’t overcrowd the pot. Once melted, sear the pork chops, about 2-3 minutes on each side.Turn Instant Pot to SAUTE and add butter.Rub with a mixture of brown sugar, paprika, onion powder and salt & pepper. If using thinner pork chops, you should reduce the cook time. Just be sure to use pork chops that are about 3/4 – 1″ thick. You can even cook them from frozen, without thawing. It can be made with boneless pork chops or bone in pork chops. The brown sugar caramelizes a bit as they cook and the paprika gives the pork chops that amazing color. This dish was my childhood favorite and I think it was extra special since my dad made it for special occasions. You can also coat the pork with a generous amount of oil spray and cook it in your air fryer if you prefer, then finish up the sauce in a pan separately. You can use a bit more oil to shallow-fry the pork chops for that extra crispy crust and juicy texture just like you’d get at a Chinese restaurant. I would avoid super thick chops that are more than 1/2” (1 cm) thick. For this cut, you will need to pound them a bit more and the pork pieces will come out a bit thicker, but will still be very crispy. The next best choice is boneless chops that are around 1/2” (1 cm) thick. You don’t need to remove the bones when you cut up the pork. The best cut of pork chop is the thin bone-in cut, about 1/4” (1/2 cm) thick.
